10 Pizzerias Elevating Cowtown's Pie Game

It's easy to take Cane Rosso for granted, but this local pizzeria chain has had a profound effect on the pizza scene across the metroplex. For starters, it was one of the first to introduce Neapolitan pizza, the authentic Italian style with a stretchy crust and upscale toppings. Its arrival upped our game, helping to spread the gospel of better pizza.

Neapolitan pizza was still fairly unknown to area pie lovers when Jay Jerrier, inspired by pizza he'd devoured while on a trip to Italy, opened Cane Rosso’s first location in Deep Ellum in 2011.

"Back in the early 2000s, Dallas was pretty much known for Pizza Hut,” Jerrier says. “Neapolitan pizza is very delicate, and you can really taste all of the components of the pizza — bright tomatoes, milky cheese, and fruity olive oil.”

Many a vendor has lost their shirt introducing something new or unfamiliar to a market, but Cane Rosso prevailed, thanks to the superb quality of the pizza.

"When we first opened, we got a lot of comments about sparse toppings and the crust being a 'soggy tortilla,'" Jerrier says. "Over time, we started to win people over by having high-quality ingredients, crafted with care, resulting in a pizza that wasn't a greasy gut bomb."

The Deep Ellum location earned attention instantly, including a game-changing visit from Food Network star Guy Fieri, who featured Cane Rosso on “Diners, Drive-Ins and Dives” in 2012, spotlighting pizzas like The Delia, a pie with mozzarella, bacon marmalade, arugula, and grape tomatoes, and cementing the restaurant's success.

Beyond the greatness of his pizza, Jerrier is a genius at marketing and social media, building a huge following via witty campaigns delivered with a mischievous wink — the most famous being the $1,000 bottle of ranch dressing. The stunt drew international press, everyone from Kelly Ripa to the “Daily Mail.”

Cane Rosso now has nine locations, including one in Fort Worth, and Jerrier's company – drolly titled "PILF Restaurant Group" – has two newer sibling concepts: Zoli's NY Pizza, which has a location at 3501 Hulen St., and Thunderbird Pies, a Detroit-style pizzeria in Dallas.
